ASIAN CUISINE- NURAY’s cook club V / 17 May 2018

We love Asian food !

Each year I give an other Asian cuisine workshop with pleasure JThere are so many great Asian recipes;  wheather they ‘r Chinese, Korean, Japanese, Thai or Vietnamese.

I  choose the dishes which are so simple, yet booming with flavours.

Learning   new ingredients and exercise new cooking techniques are my biggest target in the ocean of Asian cuisine.

Japanese  HIRATA BUNS; the best components of Asian cuisine all in one with these mouthwatering hirata buns ! Made from steamed buns stuffed with salad  and delicious savoury fillings – pulled chicken –

Those buns are tasty treats as appetizer or main dish.

RENKON / LOTUS ROOT…Lotus root is a special vegetable. It has a crunchy texture with sweet-tangy flavor. There are two ways to pre-cook the lotus root. You can cook them in boiling water for a few minutes and drain to get a very crunch and crisp texture of the final dish or you can choose to fry them firstly to slightly soften the slices. We tried both method.

OKONOMIYAKI / JAPANESE PANCAKE… literally means grilled as you like it…Better known as “  savory Japanese pizza “…A wonderful way to use up your leftovers !

It’s a great street food. There are variations in style of Okonomiyaki depending on the region/cities. After trying different Okonomiyaki recipes, finally I could update the recipe the way I like.

BANH XEO… crispy rice flour Vietnamese pancakes/crepes  with shrimp with classic dipping sauce Nuoc Cham.

I first came across Banh Xeo during my holiday in Hue-Vietnam. It’s  perfect for a fast, fresh lunch. They are very easy to put together .

It’s a  gluten free and vegan friendly  recipe!

COTTON CHEESECAKE… soft like a pillow, light as air, fluffy, jiggly  Japanese cheesecake.

I have been thinking to try this cake for a long time. It’s like a sponge cake. This delicate cheesecake has some extra steps that take a little more patience and time. However, it is worth every step.

Japanese cheesecake doesn’t really need much anything else except for an optional light dusting of powdered sugar.

Just trust me you will love it !
