APPLE CAKE

Last days of February are really intolerable!
Non stop rain, the whole day is grey… I desperately need comfort food.

My comfort food ideas start with desert or something sweet for teatime.

We all have apples at home, overtime they get softer and no one wants to eat them any more. A perfect time to use them as left overs…

I hope you enjoy my cake as much as I do.

In a large mixing bowl place eggs, sugar and salt. Beat until smooth. Add cinnamon, yoghurt, oil, lemon zest, mix them together.
Slowly add the flour mix in the liquid batter, followed by the apple pieces, walnuts, raisen. Use a spoon to continue mixing.
; Pour batter into a greased pan. Put 4 halfed & striped apples on top of the batter.
Cook the pan in a preheated oven for 45-50 minutes, or until a toothpick inserted in the middle comes out clean.
; Allow to cool completely in the pan before turning the pan over on top of a plate to remove the cake. The cake should slip out with little effort.

Pour a powdered sugar before you slice and serve.
